How to Make Seoul-Style Kimchi
The secret lies in the balance of the “Sok” (the filling).

- The Seoul Secret: Use Saeu-jeot (salted shrimp) and a light beef or kelp stock to create a “neat” broth-like seasoning.
- The Addition: Often includes Minari (water dropwort) and Gat (mustard greens) for a fresh, herbal aroma.
Method: Gently rub the seasoning between each leaf of the cabbage, pack tightly in a jar, and ferment at a cool temperature to preserve the crisp texture.
